Winter Break 2020

 

 Our winter break was fantastic!  Mostly slow days with a mini adventure thrown in!  The pandemic holiday season was strange for sure but still full of love and laughter and family.  When this pandemic has become part of the history books and not our now, our present, I think the thing I will remember most is TIME.  All aspects of it and what it means in a literal sense and what it stands for in a more profound way.  Time has been a concept that I have held close and prominently in my life for many years but in the last 10 months my how it has made its presence known.  Mostly in a good way. So many lessons learned and there is always good in that!

We all know that I have become very close with the kitchen but this little guy has too!  He had a math extra credit assignment of altering a given recipe to make chocolate chip cookies, that was a no brainer!

We briefly went to HH to do a little Christmas celebration with Ima and Shesh and we left this guy with them for the holidays!  What a gift that was....FOR US!  Ha!   We love our Jasper but he can be a lot and we SO enjoyed our Jasper-free time.  I think Ima and Shesh didn't mind the company and Jasper was probably happy to slow life down a bit. And...who can complain when you get to take walks here?!

Chattanooga and the Tennessee River

This place was amazing and we went on a guided spelunking adventure for over 2 hours 350 feet under ground!  70% of the time we were on our stomachs crawling and grabbing our way through the dark!  It was SO MUCH FUN!  We had to fit through a box at the start to make sure we could fit through some of the more narrow passageways.  The box was 31inches wide and 14 inches tall.  We had a blast! Luke wished that there was more crawling and tighter spaces.  Ha!  Kids.



We did not have our phones for pictures during the spelunking because they would have been crushed no matter which pocket we kept them in.  But we went back in the cave for a walking tour .... a great experience too but really only touches the surface of what all lies in nearly 27 miles of mapped cave twists and turns.  The walking tour was nice but our belly crawling/helmet wearing adventure was the real deal!

I made bagels...from scratch.  Good old Yolanda!  My sourdough started from March 2020 has given me endless joy and fun in making all kinds of new things.  I am a HUGE bagel fan so this was extra fun!  Not difficult at all....as with most bread products it is all about the timing.  These are my favorite things I have made so far!

Our bookworm and Jasper is back!


Bread made in my brand new dutch oven (thank you, L!) using some of the original Yolanda.  (naming my starter as proven fun for my family and friends who I speak with regularly about my baking shenanigans but confusing to most anyone else).  I feed Yolanda (the mother/most mature) once a week because she lives in the refrigerator but before she is going to be used for something like this I get her out a few days before and start feeding her daily so that she is ready for the big show!  Each time I feed her I discard some, I save that discard and make lots of other things...bagels, biscuits, cookies, crackers, cake, etc. She truly is the gift that keeps on giving!


Gorgeous!  And the dutch oven is totally the way to go!




Oh and I had a couple weeks of a massive ginger kick!  This is a ginger pudding cake that L deemed the best thing that came out of my ginger obsession!
